Slow Cooker BBQ



Slow Cooker Extra-Lean Pork Tenderloin BBQ

Ingredients:
1 package of extra lean pork tenderloin
1 medium jar of pickled jalapeño
Your favorite bar-b-que sauce

Directions:
Place pork and whole jar of jalapeño in the slow cooker. Cook on low heat for 7-8 hours. When pork is fully cooked, place on a baking sheet and shred meat with 2 forks. After meat is shredded, lightly toss in your favorite bar-b-que sauce.

Sautéed Broccoli Slaw



Sautéed Broccoli Slaw

Pasta Substitute

Ingredients:
1 package of Eat Smart Broccoli Slaw Mix (100 calories)
3 tablespoons of olive oil (120 calories)
2 garlic cloves, minced
1/2 package of shredded carrots (optional)

Directions:
Mince garlic cloves. Place garlic and oil in pan with lid on medium-high heat until the oil is sizzling, stirring occasionally. Empty bag of broccoli slaw mix and carrots (if using) into pan and cover. Stir occasionally for about 5 minutes or until the vegetables are cooked, but still firm. 

Yields 4 servings. 55 calories per serving!

Slow-Cooker 15 Bean Soup




15 Bean Soup

Inspired by Hurst Beans Recipe


No soak method!

Ingredients
1 bag of Hurst Beans 15 bean soup mix (1,920 calories)
8 cups of water
12 ounces of chicken sausage, sliced (560 calories)
1 onion, diced (45 calories)
1 garlic clove, minced
1 teaspoon chili powder
1-15 ounce can of diced tomatoes (105 calories)
1 lemon, juiced
Crushed red pepper to taste

Instructions
Sort and rinse beans. Slice sausage, dice onion, and mince garlic. Brown sausage in pan.
Add beans, water, sausage, onion, garlic, and seasonings to slow cooker. Cook on low for 7-8 hours.

When beans are tender, add tomatoes, lemon juice, ham flavoring packet from the 15 bean mix bag, and crushed red pepper to taste. Cook for an additional 30 minutes before serving. 

Yields 10 servings. Each serving is about 260 calories per cup.

Half Way!


HALF WAY

Today marks the half way point for my IsaBody Challenge. And what better way than start the 2nd half with a cleanse day! I am so excited to see my final results after comparing my "before" photos to my half way photos. Looking at how far I have already come brings tears to my eyes. I quit year-round swimming 5 years ago and have not felt "myself" ever since. Growing up and being in shape is how I have always seen myself and never figured out how to manage my weight when I am not swimming 10,000 meters every day. 

I have lost 20.2 pounds so far and 6% body fat. (Time for some new jeans) It's so exciting to finally see my true self look back at me in the mirror.

I have learned what it means to appreciate your body. My body feels so much more "in tune" and kicked chronic headaches to the curb by putting great nutrients in my body. I got a nasty stomach virus last week and the fever lasted for about 3 days, but didn't seem to slow me down in my 10K race on Saturday!

After all the ice and snow days, school has leveled out and not feeling as swamped anymore so hopefully I can post more often!








Peaches decided she wanted to take a bath in her DRINKING water! Then Donut joined in and they were splashing water everywhere.


Went to dinner and nails with my mom for the 15 pound mark.

Sick in bed with Pedialyte and saltines :( I bounced back quickly though!

Having a downhill finish was the best feeling ever!

Adios Freshman 15…4 years later

Well…I FINALLY broke past the 15 pound threshold, but I'm not done yet. It's great to see my old body coming back!

All of these ice days have been throwing me off (and giving me major cabin fever). I feel like I am back on track with my body challenge and today is day 1 of my first 2-day cleanse! I am actually beginning to get the hang of cleanse days and enjoying how productive I am, kind of shocking. School is back in full swing after being closed all of last week. Ugh! Somehow I'm managing to hang on for the ride and crank out all of these projects piling up.

Between catching up with school, birthdays, tests, 5K races, Valentine's Day, and more school, I have managed to stay super busy!

Here come the PICTURES:

My awesome handmade wooden utensils that James brought back from Kenya! They're made from wood and the handles are made of bone. I'm almost too scared to use them!

We made a father/daughter team at the With or Without You 5K race and finally broke my goal of 30 minutes! Woo Hoo!

We took a cooking class for Valentine's Day at Cook's Warehouse. It was so FUN. We are already wanting to go back!

Tzatziki



Tzatziki

Fat-Free Greek Yogurt Cucumber and Dill Dip

Fat-free and PACKED with protein!



1-17.6 ounce container Fat-Free Plain Greek Yogurt (260 calories)
1/2 Hot House Cucumber, diced (45 calories)
1/2 medium Onion, diced (20 calories)
1/2 package Fresh Dill, minced
3 Garlic Cloves, minced
juice of 1 Lemon
Salt and Pepper to taste

Dice cucumber and onion. Mince fresh dill and garlic. In medium-sized bowl, mix all ingredients together with a spatula.

Helpful hint: It tastes even better after being refrigerated overnight. Also, you can use a regular cucumber, but I recommend the hot house cucumbers because they have significantly less seeds and don't water down the dip.

Yields: About 6-1/2 cup servings. 55 calories per serving, plus the food used to dip!

Serve with your favorite vegetables, crackers, or Pretzel Crisps.

Slower Cooker Turkey Meatballs

Slow Cooker Turkey Meatballs


Meatballs:
1 pound Ground Turkey- I used 94% lean (640 calories)
1/4 cup Seasoned Breadcrumbs- I used Panko since I had it on hand (100 calories)
1/4 cup Parsley, minced
1 Egg (80 calories)
2 medium Garlic Cloves- minced
1 teaspoon Kosher Salt, plus Pepper

Sauce:
4 Garlic Cloves, minced
28 ounce can Crushed Tomatoes (315 calories)
1 medium Onion, diced (40 calories)
1 Bay Leaf
Salt and Pepper to taste
1/4 cup Parsley, minced

Mix all meatball ingredients in bowl and form small meatballs. Place in slow cooker. Add all sauce ingredients, except parsley. Cook on low for 4 to 6 hours. Add minced parsley when meatballs are done. Serve over Zoodles.

Yields: About 18 meatballs. 65 calories per meatball, or divide 1175 by the number of meatballs you make.


Zoodles

Zoodles(Zucchini Noodles)

These are my latest craze! I am not Italian, so when I eat pasta it's basically only for the texture and is lacking vitamins and adds worthless calories. I decided to add shredded carrots to my zoodles this time and turned out great!

This recipe can replace the noodles in any pasta dish recipe. Time to get creative!…I am thinking of trying a stir-fry.




Recipe
Shredded Carrots (optional)
2-3 Medium Garlic Cloves, minced
4 Medium Zucchinis (about 80 calories)
2 Teaspoons Olive Oil (80 calories)
Salt and Pepper to taste

Thin slice zucchini stopping at the seeds.

Heat oil in medium pan over medium high heat. Add shredded carrots (if using carrot), cover and cook for 2-3 minutes stirring occasionally. Add minced garlic and zucchini. Cover and cook for another 2-3 minutes, stirring occasionally. Season with salt and pepper.

Yields 3 servings. About 53 calories per serving. I may lower the amount of oil, which will lower the calories.




Cleanse Day!


Yesterday was my 4th cleanse! So far, I have only been able to handle 1-day cleanses. By the halfway mark of my IsaBody Challenge, I will be trying to start the 2-day cleanses. My first cleanse day was anything except good. I hated to the fact of not being able to eat and as expected, my body wasn't used to cleansing. Usually Sundays are my cleanse days, but I pushed it forward a day due to running my 5k.

I was a little worried about doing it on a week day when I have school and homework to get done. To my surprise, I actually never got very hungry. Although, I have adding in a serving of almonds and half an apple on top of the cleanse system. At this point I am pretty sure it is just mental mindset thinking I need the extra almonds and will be lowering the amount next Sunday! I have to keep reminding myself that I am doing my body a huge favor and think about how awesome I will feel the next day. I have had so much more energy and I end up enjoying eating a meal standing up at my table rather than sitting, weird.

I am only 2 pounds away from hitting the 15 pound mark! WOO HOO! It's almost time to treat myself. I'm thinking I desperately need a pedicure at my all time favorite salon, The Haute Spot nail boutique.

I already signed up for 2 more 5k races and a half marathon! Gotta run…

Race Day

I ran my first 5k of the year this morning along with 30,000 other runners! This morning's race sparked my love for the thrill of running and actually considering doing the Publix Half Marathon in March, uh oh…But, why not! Honestly, I didn't properly train for the 5k, but I was doing P90X. I quickly found out that running 3.1 miles is actually a lot easier when you're not carrying 11 extra pounds and finished just after 35 minutes.

It was definitely a chilly one and of course refueled with my IsaLean Shake. Instead of cleansing today, like I usually do on Sundays, tomorrow will be the weekly cleanse. You know what that means…IsaDelight Chocolates :)

Can't wait for the next race.




Regarding my IsaBody Challenge, this week I started noticing that I have lost some weight in my face. Didn't know that was possible!
